Chef Darren Sayphraraj
Chef and founder, Darren Sayphraraj, is a Los Angeles native and son of Chinese, Vietnamese, and Laotian immigrants. Upon graduating with a BA in Drama, Sayphraraj moved to New York to attend the French Culinary Institute and immersed himself in the city's high level food culture. The young chef gained fine dining experience through working at Michelin starred restaurants and notable eateries, including The Modern, The Nomad, and Dovetail. Darren moved back to Los Angeles to continue expanding his resume, developing recipes for major chain restaurants and served as Culinary Manager for Hillstone Restaurant Group.
Although Darren's early career began in fine dining, he always dreamed of opening a small noodle shop of his own. His dreams became a reality when his concept, We Have Noodles, first debuted at Smorgasburg LA in 2016, showcasing his innovative take on traditional Asian noodle dishes.
Darren's dining concept combines his New York fine dining experience with Asian street-style dishes. His first brick-and-mortar restaurant, We Have Noodles, will open its doors to the public in fall 2017.
Chef Darren was selected for Zagat's 30 under 30 Culinary Rock Stars Redefining the Industry in 2016.
